Pork Sinigang


Pork Sinigang

Ingredients:
  • 1lb pork chopped in 1 in. cubes (any type; shoulder, ribs, belly, etc)
  • 1/4 cup sliced tomatoes
  • 1/4 cup onions
  • 2 cloves garlic
  • 1/2 cabbage head or 1 cup 1 in. chopped bok choy (can really be any type of leafy vegetable if you want to experiment)
  • 4 T Patis fish sauce
  • Tamarind seasoning
  • Salt
  • 5 cups water
How to:
  1. Combine water, 2 t salt, and meat in a pot. Boil on high for 30 min uncovered.
  2. Remove from stove and drain water. 
  3. Put pot back on stove and add remaining water, garlic, tomatoes, onions and 1 t salt.
  4. Bring to a boil, then add fish sauce and 1 T tamarind seasoning. 
  5. Stir occasionally, and taste. If you want a more sour taste add more tamarind sauce, if you want it more salty add salt. 
  6. Add cabbage (or other vegetables) to pot. Cover pot and cook for 5 min. 
  7. Uncover and stir everything together. Cook until cabbage is soft but not breaking apart (about 3 min)
  8. Serve hot over bed of rice.

This is a recipe that my mother taught me, its not much ingredients but for those of you who donʻt live in an asian household you might need to go out to get the tamarind seasoning and fish sauce. This a family favorite, It takes about maybe 45 min of total cooking time. I love mines sour, which is the key to a sinigang dish, so I usually add more tamarind. But of course, cook to your liking. Hope you like it!
